Prompt Pot Vegetable Beef Soup

  • 1 lb Beef stew meat
  • 1/2 medium onion diced
  • 2 Cloves garlic chopped
  • 3 Stems celery diced
  • 3 medium Carrots diced
  • 3 medium Potatoes diced into bite-sized pieces
  • 2 14.5 ounce cans diced tomatoes
  • 1 Cup frozen corn
  • 2 Cup water
  • 2 cups beef broth
  • 1/4 teaspoon Salt-
  • 1/4 teaspoon black pepper, ground
  • Set your instant pot for frying. Cook the meat and onions until they are brown and the onions are tender.

  • Put all other ingredients in the instant pot.

  • Put the lid on and click into place.

  • Click the manual button and set the time to 7 minutes. Let it naturally release pressure for 5 minutes, then quickly release.

  • Remove cover; stir and add more salt and pepper as needed. Serve.

* Add frozen peas to your children's bowls to cool the soup 🙂
