Prompt Pot Vegetable Beef Soup
- 1 lb Beef stew meat
- 1/2 medium onion diced
- 2 Cloves garlic chopped
- 3 Stems celery diced
- 3 medium Carrots diced
- 3 medium Potatoes diced into bite-sized pieces
- 2 14.5 ounce cans diced tomatoes
- 1 Cup frozen corn
- 2 Cup water
- 2 cups beef broth
- 1/4 teaspoon Salt-
- 1/4 teaspoon black pepper, ground
Set your instant pot for frying. Cook the meat and onions until they are brown and the onions are tender.
Put all other ingredients in the instant pot.
Put the lid on and click into place.
Click the manual button and set the time to 7 minutes. Let it naturally release pressure for 5 minutes, then quickly release.
Remove cover; stir and add more salt and pepper as needed. Serve.
* Add frozen peas to your children's bowls to cool the soup 🙂
